Slowing a system down

OK, so I finially found a shop that can install bags on a 72 eldog, but when I went to go talk to the guy he told me something that I had never heard before. We were going through the setup that I want, and I told him that I want to run slam specialties HE-6 in the front (would like to go HE-7 all around, but can't fit em in the front) and HE-7 in the rear, with a 12 gallon tank with 8 1/2" ports, 2 viair 480 compressors, 8 1/2" 2-way solenoid valves, 1/2" hose all around, 2 dual needle gauges (for the bags) and 1 single needle gauge (for the tank), 2 water traps for the 2 compressors, and all DOT fittings.
When he asked me what I wanted the system to be able to do, I told him I want it to do FBSS, and be able to get the car up or down in about 1/2 a second. I don't want to hop it, or do any dancing shows (although I do want to be able to play with the system when Im pulled up at a light or in a parking lot).
He told me that I am not going to want 1/2" to do this and I should just go with 3/8". He said the 1/2" will be so fast that I will just touch the switch and the car will be right up or right down and I really wont even be able to have any middle positions....what is everyone's experience with this? Also, if I just go with a 1/2" all around system is there such thing as a slow down valve that is the same quality as DOT fittings so they are less likely to leak?

This would be fast enough for me and he is only running 3/8.

If you click on the video in this post, you will see an example of a car that moves too fast for what I want.

Fill controllers will slow your setup down, I have some on the rear valves of my Impala so the ass won't jump off the ground.

I need to figure out how to post video. My car will blow you away and you'll think it has hydro.

Slam's right you can get the fill controls and adjustable mufflers. You will be able to make it as slow as you want. If you stay with the 1/2 valves you will always be able to open them up when you want to show off.

I'll have to bring the car and the camera over so you can do that. Our camera says its great for youtube, i just never messed with any of it.

We can post up your rolling three, just try not to get caught this time
