cans/cylinders do the same as bags....except that they don't act as springs, just give up and down like hydro cyl's. in theory air is commpresible but in practise you need a large volume of air to get a reasonable ride, so you need a "tank" in line [accumulator in AIM speak] to your supply tank/valves. the only advantage of cans over bags is that they take less room to mount [ideal for some euros]
